After completely transforming Chef Trey Foshee’s iconic 35 year old fine dining restaurant in La Jolla, Chef asked LUCE to create a test kitchen for innovation that would be able to double as his growing family’s central hearth. After much discussion a 4 car garage building was transformed into a kitchen with commercial technology and flow, paired with family heart and soul. Since then, Chef has transformed his restaurant kitchen’s philosophy and opened 2 new locations that feed into his passion for street food and Latin culture. This project is a testament to how a simple re-imagining of traditional space can change a mindset and inspire big change!
